Na only Ogbono soup you sabi cook? What of Egusi soup?
OK here we go!
~2 cups egusi grind it (soaked it in 1 1/2 cups cold water 30 min-1hr)
~1/2 cup palm oil
~Dried fish soaked it in hot water for 30 min
~2 Cubes Maggi or Knorr cubes
~2-3 Red bell pepper-unseeded
~2 large tomatoes unseeded
~Garlic (optional)
~2 tbs curry powder
~1 large Red onions
~4 hot peppers your choice
~Meats (Kpomo, Goat meat, stock fish, Periwinkle, fried snail, Shrimp-if fish is fresh, etc...)
~Greens (1-2 large spinach-chopped, ugwu, mustard greens, Bitterleaves, your choice)
~3 tbs dried grey fish
Preparation:
You don't have to fry the egusi its your choice
1. Pour palm oil into the pot, heat it for 4 min
2. Pour the egusi inside and turn it so that it won't burn for 4 mins
3. pour small stock from your assorted meats into the egusi continue to cook for 10 min, add curry powder, add dried fish. If u r using fresh fish, then it will be close to the end of your cooking so that it won't break due to too much turning of the soup. lolz...
4 blend red peppers, tomatoes, hot peppers. Cut 1/2 red onion into 1-2 inch, pour them into the soup, turn the soup. Cook 10 min
5. Add all your choice of meats, periwinkle, fried snail ; gradually add the stock(u want it to be thick, so watch your stockings lolz...) cook for 30 min on medium heat. Continue to check your soup and turn it gradually so that it won't burn.
6. Add the dried grey fish, maggi
7. Finally, add your choice of greens. (only one choice o...) cook it for only 3 mins. But if it is dried bitter-leaves 5min.
8. WARNINGS: Avoid salt in any of your cooking. Salt is already in your stock, tomatoes, and maggi. So I prefer not to put salt in it anymore. Let the eater add salt to his/her plate.
Ready to serve with poundee, white boiled rice, amala or oatmeal fufu.
