Most often they are formal settings with rules and regulations, including hours of work, shift etc for all manners of staff. The hours are defined but there are odd days when you may have to put in more hours as the occasion demands. It is never 24 hours! In Europe the law defines maxumum number of hours an employee must not go beyond. A human starved of sleep for a few days will waste away and will not be in any position to contribute to the smooth running of the establishment.
