Ingredients:
•1 Yam tuber
• ½ Kilo Beef
•1 large red onion , Diced
•2 Red Scotch bonnet pepper, Blended
• 1 Bulb garlic, Minced
•Seasoning (Knorr / Maggi)
•1 tbsp. Curry powder
•2 Dry fish (optional)
• 3 Plum Tomatoes, Blended
•1 cooking spoon crayfish (ground)
•3 cups Palm oil
• A handful Scent leaves (Ahimu/Nchuawun)- chopped
• A handful Pumpkin leaves (ugwu) , chopped
•Salt to taste
Procedure:
-Peel and cut the yam tuber into small chunks then wash properly and set aside.
-Wash the Beef into a medium sized pot; add the Water, red onion, Scotch bonnet pepper, garlic, seasoning, Curry powder, Salt to taste and cook till it’s soft and tender for about 20mins. Once done, remove the meat from the Broth and set aside.
-Add the chunks of yam into the broth with the Dry fish and some more water; leave to cook for 20mins till it softens. When the yam softens, marsh a couple to aid in thickening
-Add the palmoil, Tomato puree and crayfish; Leave to cook for another 15mins
-Add the Scent and pumpkin leaves; Leave to simmer for 5mins
- Turn off the burner and leave to cool for sometime
-Serve.
